Help?

I just read Emma and a little bit curious about the scene with Mr. Knightey after the Box Hill incident. Mr. Knigtley was about to kiss Emma's hand before he went away, but then he stopped abruptly before doing so... before this, I always thought that a kiss on the hand was a mere sign of formality, but if it really was just a sign of formality, then why didn't Mr. Knightley finish it?? So, I'm a bit curious about the meaning of kiss on the hand around that time? Could anyone please tell me? thanks...
