In Demon Knight everyone takes their role seriously and Billy Zane provides some amount of levity as the villain. The effects are fantastic despite the limited budget. Set looks amazing, cast is mostly veteran character actors, special attention was paid to monster makeup and effects.
Bordello of Blood is a steaming pile. No one clearly wants to be there. Dennis Miller notoriously did not want to be in the movie, but agreed when they paid him an obscene amount, which wrecked the budget for the rest of the movie. That's why you see less effects. He wrecked the dialogue with his bad improv lines too.
Angie Everhart should also not have been in the movie. She looks gorgeous, but obviously that's because she's a model, not an actress. If you want to see what this could have been, just watch Dusk till Dawn.
Bordello killed what could have been a decent movie franchise.
