Did it seem like Walter Mathau had a bit too much hair for a man his age in this movie, especially when the hairline of his screen son (played by Kevin Pollak) is severely receding?

surprise surprise .. some guys just don't lose their hair no matter what .. take a look at Ronald Reagan .. died in his 90s with no sign of any recession .. lucky bastard lol .. with that said though, it could be a toupee I don't know

It wasn't, Matthau has naturally thick jet black hair. He had to have his hair partially shaved and removed for his role in The Sunshine Boys to simulate balding.
