Why bother with the monolithic God?
It's only one more season of episodes, but introducing the idea of a single monolithic God makes the once powerful Gods of Olympus into a jv squad playing the Seattle Seahawks.

But Xena is an original character so introducing the One God didnt feel as awkward as first. Hercules is so tied to Greek Mythlogy it just felt wrong.
Of course it only worked on Xena when Judiasm was just another religion. When they brought in proto-Christians (Elijians what the eff?) and brought in faux Jesus (even though the birth of baby Jesus happened on Hercules and Mary, Joseph, and Jesus showed up on Xena) the show went downhill.
The point was to show that the one true God is real and the pagan/Greek gods are false gods who are subordinate to Him. That's also the same reason why they had the Jesus' birth episode.

The false Gods were far more interesting and consistent
