What the hell is she doing unbalanced on the side of the bath tub when she's told Michael just arrived for their date. Was it a bad acting choice by Ryder to make the character seem..."cute" or just unprepared...whatever. Or was it Stiller saying, "Hey, lets make her look all wacky for this shot cos I've got nothing."?

I think her character was trying to entertain herself while she was waiting for her mustache bleach to finish doing it's job.

she is looking at her dress in the mirror! I have done it before - stand on a chair to look in a mirror to use it as a full-length mirror so you can see the rest of your outfit.
