He won the Heisman though, so someone would've drafted him.
That said, he probably won the Heisman his junior year and then suffered a significant injury his senior year and either a) draft stock plummeted or was drafted very late and cut prior to season start, or b) for personal reasons decided not to play. Seemed like he had a pretty nice life and was a pretty successful car salesman.
He prob chose not to play if he got hurt. I can see him having a ton of endorsements and being on TV a lot. Probably announced TV games for a while before retiring and going home.
Could see him being a non-violent OJ Simpsons esque figure.
He obviously made some money playing, so he must have reached the NFL but not had anywhere near the success of his college career. He probably signed a nice rookie contract, had a few endorsements, played a few years and either wasn't good enough to stick around, or the injuries started adding up. Probably was married by then and his wife urged him to walk away while he was still in good health and he had plenty of money to start up his car dealership, and made even more money off of that.
Winning the Heisman is such a prestigious honor and probably by far the highlight of his career, so that is what everyone celebrated the most.
