I can't necessarily give logical answers but I can articulate the purpose/meaning behind the elements in question.

Francis goes to the club because it reflects the relationship he had with his daughter. It is heavily implied that Francis molested his daughter (Why can't I touch you) and that is reflected in his relationship with Christina. He doesn't want to face the reality of his wrongs, rather he is content in romanticizing them in a safe environment.

Egoyan is interested in showing alternative families rather than the normalized structure. Thus he is interested in showing a family without a mother and no explanation as to why she is not present.

Eric confronts Francis, forcing Francis to "snap out of it" and reconcile with his feelings.
