Please visit the above link. John Leland, owner of Norman the steer from 'City Slickers II' has been contacted by Hollywood producers about using the steer again, back in August 2007. This apparently all but confirms the rumors of an under-wraps 'City Slickers III' being in the works, ready to go soon. The article actually states that the steer would be used for a 'City Slickers III' as told to Leland. The article has seemingly been "removed" from FresnoBee's website (maybe because CSIII leaked and the announcement wasnt ready yet? who knows...) but a cache is available at the above link.
