do with the other 23 hours a day? Music class is one hour!

Well, they did rehearse before and after school.

Plus I imagine there were more music classes than just choir. A school that size could easily fill a day with music classes. Could even do it with three teachers, one for instrumental, one for vocal and one for general music education.

I'm not sure about your highschool but the highschools I went to had multiple classes every hour or every hour & 1/2. Once one class ended in a classroom another group of students would come in to be taught. So one teacher had multiple classes to teach a day. Most teachers taught the same subject and the same lesson each hour.
