How did they know?

How did they know after the "test" where she hit the guy in the restaurant, that after she got away, she wouldn't make a break for freedom?

I am a very decisive person, I think.

Where would she go? Once she had pulled the trigger in a crowded restaurant she would be hunted. And while she killed someone under the influence at the beginning, by the restaurant scene she had become more civilised, so the shooting in the restaurant deeply upset her. You could tell she was no longer the same person she was at the beginning and so no doubt had the confidence to exist on her own away from the agency. That, or she just went back to find out why they left her for dead.
