I assumed it was to convey stress and possible time.

I agree. I thought it was more from stress from the suit and illness. To answer the OP, AIDS alone would not gray hair. At most, certain treatments may have caused it too, but I can't confirm that. I think it really was more the crew trying to convey failing health in addition to the weight loss.
