Because it takes 24 hours for food or anything else to get through the digestive system. And old Lep himself isn't going to wait that long, because he's a sadistic, gold obsessed b@sterd!

I was wondering this as well. I can't remember if the gold coin could grant wishes for this movie, but the Leprechaun could have used magic to make his bowel movements to go quicker. I guess the Leprechaun is a sadist and will go for the most painful option.
