Can someone explain that? I've just never understood it.

It's a joke, a lousy one.
shareGerman version is much worse and makes no sense at all:
Blind dinosaur: Sehnixsaurus (See nothing saurus)
His dog: Bellosehnixsauris (Bello see nothing saurus, Bello being a stereotypical German dog's name but Rex is that too so why change and destroy the joke?)
In English: Doyouthinkhesaurus and Doyouthinkhesaurus Rex
