I mean specifically the bagpipe (with some kind of guitar and percussion) music played after the convictions are overturned at the end, when Gerry is making his way out of the courthouse.

Ironically, no bagpipes were performed. The producers used distorted sounds of an accordion, and bass flutes and bass clarinets and fiddles, to create the Uilleann pipe/tin whistle sound.
