It was to show how mean he was that he would steal a little girl's doll.
shareAlso, Margaret mentions that Baby Louisa (the doll) was antique so maybe it could be worth something. Just a thought. And does anyone find it odd that Margaret is holding the doll in her window later on in the movie? How did she get it back?
shareMaybe she got a new one or had another doll

You just can't "new" antique. Maybe the cops got it back from him.

A girl wouldn't just have one Doll

because it was a antique
shareThe doll was a valuable antique that looked to be made sometime around the early 1900s. It was probably very valuable.
sharewhy did he give the doll back ?
shareI read somewhere that there was a deleted scene where switchblade sam gave the doll back to margaret so dennis could tell switchblade sam where mr. wilson's house is.
shareyeah I was just reading the book again and it explains why Sam gave the doll back(Thats where I read it the first time I just couldn't remember exactly what it said) anyway Sam gives the doll back to Margaret in exchange for the address and combination of the safe by Dennis. hence why he was able to open the safe later on in the movie.
shareMaybe he thought he could use the doll to smuggle drugs.
shareTo probably sell it somewhere, okay? He certainly wasn't going to play with it like William.
shareHe figured he could sell it or something. Also, remember he is a thief and likes to rob people. Remember he also takes the apple from Gunther? Now, yes, he could eat the apple, but still, with the doll, maybe he knew it was worth something.
share^Even if he couldn't sell it, yeah I'm sure Sam was something of a kleptomaniac, just stealing stuff for the thrill of it half the time!
p.s. I've always had Sam envisioned as 1993 Doc Brown from the "Evil Hill Valley" version of Back to the Future II where Biff was corrupt and owned the casino, lol.
He was just being a d*ck. He basically got a kick out of making a little girl cry.
shareMargaret points out it's an antique, so there was likely some value to it. How Switchblade knew, or would even care....I have no idea. But it was obviously just to make the audience hate him more.
shareI thought Margret was just being overdramatic calling her doll an "antique". It certainly couldn't have been that hard to get since she had another during her scene when everyone was looking for Dennis.
