I can't really tell if you're serious about a debate or you're trolling. You wind us up with realism and credibility issues then finish up with something along the lines "but hey, it has nice colors and the main message is the focus on bright primary colors". But here's to hoping for the former and not the latter...
While I am not a UniSol "white knight" I will try to provide some explanations as I see them. Yes, defending it may seem as cliched as defending "stellar" (literally, not figuratively) movies where you see explosions in space and worm hole travel without anyone or anything being torn apart, here's some train of thought, Please take it with a grain of salt - the explanations are obviously based on "experience" from multiple other similar movies where such explanations are provided therefore, the amount of "ffs", *facepalm*, "ORLY" and "oh come on!!!" will surely follow. And yes, I also utter those words, but you asked for an explanation so here it is:
#1. One explanation for not aging is the experimental tissue and cell regeneration; healing works (according to the science of hollywood movies) by regeneration and in the same theory, perfect regeneration can (depending on the movie) either stop or slow aging
#1.5 (@callumr444): one reason (apart from the difference in years between the movies) of aging in sequels can be that without the treatment of the UniSol program the aging is starting to slowly take effect again
#2. Please read about "cryonics" (not "cryogenics" as it's something different); Cryonics, believe it or not, exists even now, in real life; because I am lazy to search for the article, I'll vaguely mention that doctors will put soemthing in the body (similar to antifreeze) to stop the cells from degenerating due to the extreme temperatures
#2.5 fun fact: amphibians seem to have a "built-in" antifreeze cell\hormone\whatever it is called that serves a similar purpose (excuse my lazyness :-) )
#3. The reason I mentioned "experimental regeneration" at #1 is because it's a guess; if it were perfect, it'd be instantaneous, instead it only happens at lower temperatures (the ice) or within controlled environments (the mobile lab); how ? as most SciFi writers are lazy they usually slip one thing for explanation to not bother with details: nanotechnology; an alternative explanation provided by other movies is fast cell division; also it's not automatic; as you noticed they have to actually rest to do it.
#3.5 fun fact: I actually read some time ago that if a pregnant girl has a health issue, the fetus would send stem cells to the affected region to help heal the mother so that she may be healthy enough to provide a safe birth; reading that was amazing
#4.1 it is not explained for how long they were kept; might be possible since there was no "real" technology back then
#4.2 somehow I doubt the technology existed way back in the Vietnam War; I didn't see any spaceships blowing up enemy territory so I doubt cyborgs or brainwashed-enhanced-soldiers existed either; back in the intro stage they were regular human beings, soldiers fighting in a war, difference is, one of them had a short-circuit in the brain (pun intended)
#5. according to most movies revolving around "confidential", "top secret" and "national security" themes, WHILE IT MAY BE hidden from prying eyes, conspiracy theory themes claim that there is AT LEAST ONE branch that knows of its existence: the one that initiated and funded the project in the first place; what I think he meant by the wimps at Washington was the "common people" not "black ops organizations", "shadow organizations" or "rogue organizations" (as some movies like to call them)
#6. see #5; now if you want to be meticulous as to "hey when you see expenses with values like $999999999999 monthly, for 'security equipment', don't you get your red flags raised and start investigating ?"; well maybe; just remember the whole "clearance" and "need to know basis" themes from movies;also the funding might be off the books and most likely illegal
#7. I guess they are humans more or less, just genetically (?) altered or enhanced by drugs; perhaps the treatment inside the mobile lab supplements for eating; also not every scene is shown (i.e. you don't see bathroom scenes in most movies) so it is possible they could eat, but it just wouldn't be shown
#8. since they're "zombies" (to an extent), I doubt they have a day off; also, if one would go astray, notice how easy it is for them to wonder off without the earphone to give them instructions; someone might just take one and use them for whatever (dark) deed they'd want
