Driving from San Francisco to Reno takes about four hours, with only one major highway (I-80) connecting the two cities. That's plenty of time for the police to set up a roadblock and stop Willy and Joey before they get back to the casino with Delores.

What I thought was a plot hole -
If Vince was so out to stop Delores from testifying in court against his part in a murder - how could he have Delores assassinated in front of a whole group of nuns? Would he then have to make all of them disappear?
That's only half a plot hole. He's angry and not likely thinking that through so the movie skates by.
