Irish Stereotypes

Is it supposed to be an inside joke that Maureen O'Hara's character points out negative stereotypes for every non-Irish person she meets, yet her and her friends display all of the typical negative Irish stereotypes? (heavy drinking, fighting, disgruntled etc.)

the irony is a welcome part of this gem of a movie.

That's the whole point of her character to show how hard she is to get along with. She sees the faults in every one but not in her self. She isn't self-aware and people who aren't self-aware are usually the worst people to be around.

I must be one of the best people to be around then, because I'm an a-hole but at least I know I'm an a-hole.
