It was fear that kept him in charge. If his boys were scared enough of the "Beast", they would follow him in whatever he wanted. Just like the US government keeps its citizens afraid of the "terrorists".

Jack didnt really believe in the beast but became easily convinced when they were dancing and chanting. He was using the beast for fear so that people would join his tribe rather than Ralphs.

They realized it was Simon as soon as they stopped stabbing. They all knew it. Since they obviously hadn't killed the beast, but one of their own, the beast would still be out there.

Also, there was a moment when Jack was like 'we will hunt today and leave another sacrifice for the beast'
and one of the littluns was like 'didn't we kill it?'
and Jack was like 'NO, it can never be killed' or something.

So I'm guessing that the littluns believe that what they had killed was the beast but the biguns knew better and were just as scared because of who they had killed instead of what they hadn't.
