There were 4 different types of cheeses. The key is the quality of the cheese.

New York and most NE quality pizzerias use a Wisconsin brand of mozzarella called Grande. It's expensive. It's only sold in 6lb bags or blocks, too much for me to use and it supposedly doesn't freeze all that well, so I haven't bought any. But I can tell Grande cheese immediately.

I'd like to try it, but I haven't bought any either. Freezing is essential though, mozzarella goes moldy faster than Buzz eating the only cheese pizza.

I'm going to take a flyer here and wonder if you've never had really really good pizza. I'm from the Northeast U.S. and have lived on New York and New Haven pizza. They offer a plain tomato pie that will knock your socks off. I'm talking about just sauce and some grated Romano sprinkled over the top, no mozzarella. Plain. Amazing.

My favorite pizza is Sausage and Mushroom, and two of the best I've ever had were in New Haven (Modern and Sally's), but even their plain tomato pies are ridiculously delicious.

EDIT: I was driving through CT a few weeks ago and had a "Rustic Mushroom" at Pepe's, and wow was it amazing.

EDIT #2: When my boys were younger, all they would eat is plain cheese. In fact, when I make pizza, I always make a plain mozz just for my oldest son who still prefers a straight cheese over any of the great toppings one could have.

I've read that there are basically two regions of the U.S. where you can find good pizza: the New England/New York/New Jersey corridor, and the Chicago area. From what you've said in your post, it sounds like this is true.

Can anyone else verify this?

I like the pizza places we have here in Southern Illinois. Some people to me seem too picky to say that the only great pizza in America is in New York or Chicago. But then I have never been to New York so I am biased. I have visited Chicago and eaten pizza there. I can't say it is any better than the pizza we have here in Southern Illinois. It was good, mind you but so are the places in my hometown.

Southern Illinois may be close enough to Chicago to feature restaurants that offer the same style of pizza.

No. It takes 7 hours of driving to get to Chicago from where I live.

I don't think that's the point. A southern Illinois pizza joint would be wise to look at what sort of pizza is popular in Chicago.

Whatever. I've lived in Southern Illinois most of my life and fact is everyone always thinks whatever thing in whatever area they grew up in is best.

Be aware that those well regarded hot spots *still* have some crappy pizza, so if you happen through any of the pizza meccas, make sure you pick one the locals know well or have nationwide recognition.

Here's something you can try: order a frozen pizza from one of the well known places that actually make them and package them as opposed to just selling their name.

You can order a New Haven type frozen pizza that you cook at home. Now, it won't be as good as any pizza fresh from an oven, but it's close. You can buy a frozen Zuppardi's pizza (West Haven CT) and cook it in your oven. They're not cheap, especially with shipping, but if you aren't thoroughly impressed with this frozen pizza, then New York - New Haven pizza might not be your speed. Lou Malnati's (Chicago) also sells frozen pizza although I haven't tried one of those.

I mean, even when I worked in CT, I knew people who thought Costco pizza was good. My God, what an abomination of canned sauce, unfermented dough, and cheap mozzarella. If you think Costco pizza is great, then you'll be happy with anyone's pizza, like Pizza Hut or Dominoes.

I don't travel, so there's no way I will be visiting any of the "pizza meccas." And I'm sure there are plenty of bad spots among the good ones, like you said. Thanks for the information because I've always wondered if what I read was true.

I wouldn't buy a frozen pizza regardless of the brand name. The foundation for a good pizza is the crust, and when the dough gets frozen it destroys the flavor. I tried Costco's horrible "pizza" once and that was enough. It's another product consisting of frozen crust with cheap toppings, masquerading as "pizza." And don't even mention Pizza Butt or Vomitno's, or any of the giant corporate garbage chains. Their so-called "pizzas" should go from the oven straight into the dumpster. I don't see how those places stay in business.

If you're in the U.S., check up on Barstool Sports pizza reviews on Youtube. Dave Portnoy has been to every state as far as I know, and he's pretty accurate on his scores in my opinion on the places I've been to that he's covered.

There might be a great place not too far from where you are.

UPDATE: They mentioned one of the places in my city where I go for pizza. It's a small local chain that has 19 locations throughout the metropolitan area. They gave it a 7.1.

7.1 isn't bad for Barstool (tough grading system). Anything over 8 is really really good. Good luck and let us know how it is.

I've ordered pizza from this place quite often, and have always been happy with it. It's one of four places in my city that are local or family-owned. I never do business with the big garbage chains.

I was just curious about the differences between the Northeast U.S. and Chicago areas compared to the rest of the country.

I love every kind of pizza, except pizza with olives-gross.

However, I just find "cheese pizza" to be about as basic as it gets. What is that, dough and melted cheese and that's it. But as others have written, maybe it's the type of cheese that makes it appealing.

Every time Kevin orders a cheese pizza in the movie, we all just laugh because it's so basic and you'd think a kid at his age would go for the whole meat lovers, or Pepperoni & Bacon, or even the highly debatable Ham & Pineapple.

Cheese Pizza... lol. Dough & melted cheese. Nice.

But as I said before, I'll definitely try it with a different type of cheese.

Pizza with pineapple on it is no longer pizza. It's nothing. It's a circular pile of wrong. It's an abomination, and a crime against humanity... and nature... and God... and decency... and democracy. It's also probably racist, transphobic, homophobic, and Islamophobic. It is guilty of cultural appropriation, terrorism, and most of all disgustingness.

I like pineapple on pizza. Not all the time, but it's a refreshing switch from just meat and cheese and sauce.
Sometimes the flavors and texture blends very nicely.

Nah, I strongly and (kind of) respectfully disagree. I'll eat it, but I'll take the pineapple off and eat them separately. I like pizza, I like pineapple, but the two do not belong in a human being's mouth at the same time IMHO.

I also love BBQ sauce, but BBQ sauce does not belong on a pizza as a substitution for pizza sauce. It's wrong.

I never liked Cheese. As a kid I preferred pepporoni and as an adult I prefer to have a pepporoni, onion, and belle pepper pizza.

Me I have to have toppings on my pizza, I always thought a plain cheese pizza is bland.
