Interesting concept, CAMBUS, but I think that an "eccentric" child would take away from Victor's own foibles, especially when Mrs. Warboys already provides enough additional eccentricity.
If a child were necessary for plot development (or to expand the cast palette), I would favor a daughter, a professional woman in her mid- or late 30s, who would occasionally show up at the Meldrews' to escape her husband and would side with Margaret in most situations involving Victor. Someone like Diana's niece in the series "Waiting for God," a relatively well-adjusted woman with a good sense of humor.
I'd be interested to hear your own proposal for an added character. Could you elaborate?
Seemingly they did have a child that had died very young, hinted at more in the show.
Think it was the right decision due to the darker depths of the show such as it was, so no it didn't miss a trick.
