I know that you see him do little bits of it, with the uncomplicated stuff you see his face, but I was wondering if anyone knows if he did any of the really flashy, fancy skating? I guess it was probably a stunt double, but I'm curious as to if he can really skate?

No. His doubles for the MAJOR freestyle and street were from Rodney Mullen and Mike McGill did the vert (makes Brian look like the BEST skater in the world, including downhill!). But I am sure he did some basics like the Ollie etc. Maybe just the Ollie and skating itself. Unless he is a QUICK learner. lol
shareTony Hawk wrote in his autobiography that the Bones Brigade were supposed to teach him the skating basics, but that he wasn't all that interested. Max Perlich was actually the one actor in the cast that did know how to skate, though.

On a TV special they said that Christian was able to just ollie, but most of the stunts were in fact done by stunt doubles.
