Well, depending on sort of display he'd decide to construct, it could conceivably take a few hours. You have dress each one, pose them; depending on what action they're doing, is possibly he'd had have to change some parts on the mannequins, like the display where they're getting dressed, running towards the bus. The might need to build props or rig up some sort of mechanical device, like getting the mannequins to "pedal" the bikes; or the tennis ball that went back and forth. Having done community theatre, and especially building and painting set pieces, these are all things that may seem simple, but can be time consuming.
But there is more to it; since Emmy only come alive when it's just her and Jonathan, late at night, when they're alone in the store is the only time they can realistically sped any length of time together.
