My youngest son was only about 4 or 5 when this movie was released; he'd watch it over and over (especially the beginning, when poor Ernest is cleaning out the toilets and does his "Ewwwwww"). My son is 23 now and I tease him about this being his favorte movie, but I say anything that can make a kid laugh like he did, and is reasonably wholesome, as the Ernest films were, is okay with me!

HAHA My kids are 28 and 25, both well educated, We still laugh about this movie and quote the favorite lines. Coincidentally,the movie was filmed at a state park in Tennessee 2 hours from where we live. We ate there one Sunday not long after the movie came out and had a "deja vu" experience--all of a sudden it dawned on me where we had seen the dock and lifeguard chair. My kids thought that was so cool. You are right--this movie has been the cause of many giggles & much happiness to a lot of kids, big and little. We still do the "Ewwwwww."
I'm around the age of your kids and pretty well educated too, and I still occasionally think about this movie and laugh too. Once on a college trip to Europe, I kind of randomly started singing the chant that we hear both at the beginning of the movie and later when the chief does it (something I still occasionally do because I think it is catchy), and my roommate on the trip said "Hey, Ernest. All right." I was so stunned that he was able to recognize a specific American Indian chant presumably made up for an Ernest movie. After that we had a lot of good laughs about Ernest Goes to Camp.
I think when it came down to it, whether or not you like the Ernest movies is dependent on whether or not you like Jim Varney. I really liked the guy, I think he always kind of reminded me of a younger version of my grandfather (who was from Oklahoma, and had a similar accident). Like you mentioned, he had that trademark "EwwWWWwww!" His strained relationship with Vern, his nervous laugh, there were a lot of little trademarks that you either got or you didn't. I was very sorry when I learned of his death. I think he was poised to make a lot of really good things in the future, he had just been in both Toy Story movies. It wasn't his time.
A lot of the movie is more or less forgettable, but Jim really shines in his character. He's why I enjoyed the first three. After that I just grew out of them. And there were a LOT of them after that.
