Blind Monk with Blue Eyes?
Where have I seen this elderly actor before? Unfortunately, I can't remember the name of the monk he was playing, otherwise would have searched from the cast list of the film.

It is jorge of Burgos. He is played by a russian actor so i don't know what nationality he is supposed to be in the movie, but in the book Jorge is Spanish
shareUmberto Eco said many times that this character (a blind bibliotecarian called Jorge) obviously was an explicit homage to his favourite writer, the argentine Jorge Luis Borges who also was blind, bibliotecarian and loved labyrinths like the one in The Name of the Rose.

That is all true and interesting, but the OP's question was about the actor and I answered it almost three years ago.
