What do they have against vegetation?

Sato is obsessed with breaking a board. His nephew makes an attack on the garden. Later, they come back with a dozer to finish the job, uprooting the rest of the garden. At night, they bust up some more plants.

Chozun buys vegetables from the villagers, but he uses weights on the scale that are lighter than the normal weights, which means he's getting fewer vegetables for his money (he's cheating himself). It seems like this movie has a trend of doing bad things to plants.

maybe he was forced to eat them as a kid?

A bonzai tree is the Miyagi family dogo crest. By extension they hate all plant life. In Okinawa, honour very serious.

he was the seller, not the buyer.. villagers would pay him for whatever vegetables they took.. the lighter weights required fewer vegetables to balance the scale.. they would pay for 5 lbs. but only receive 2 lbs.

He was the seller? I need to watch that again. I always thought he was the buyer.

This theme carried over into Part III, with Daniel and Miyagi committing timber theft; uprooting trees from their natural homes in California forests and turning them into faux bonsai which they then attempt to sell for a profit.
