I love this movie, but there's no way Burton would have rejected her...

Most definitely this fine actress has the best of both - beauty and intelligence . I so agree she was great in this movie and could not see any other actress playing the role of Gracie Law ( IMPO the character role was tailor-made for her ) . Also my other favorite roles of hers were from the movie - " Porky's (1980) " as Miss Lynn "Lassie" Honeywell and from the TV Show " Sex and the City (1998-2004) " as Samantha Jones . Just a wild guess here perhaps it was left that way for a possible " picked up where they left off sequel " but sadly of course a sequel never came to pass . After all Jack and Gracie did say " see you around " to each other just before Jack left the restaurant to travel on in the end too ( which gave us fans the notion that the storyline was " to be continued on ... " ? ) . So I do agree Jack would have come back to Gracie in the sequel ( most likely would have said to himself in the truck as he was driving - " What was I thinking ? " followed by a dramatic turn around of the truck and heading back to China Town ) .

probably overthinking it, but it was strange that going up to talk to her at the airport and then kissing her in the tunnel and in the last fight, at the end he just passed at the chance?
she did look eager to be with him.

I'd say Burton rejecting her at the end was two things. One Carpenter was going for a non traditional story (Jack thought he was the hero but he was more sidekick) so that followed the intent of the movie. Second in Jack Burton's character, "yeah, she wants, she'll be waiting, don't have to break a sweat." Agree on Catrall's looks but also on her she played Gracie. The early scenes in the movie had a call back to brassy 1930s women who went toe to toe with their leading men but with an updated 80s woman's sensibility. Stinks that the screenwriters didn't go further with that and she just became a damsel in distress when they already had one.
