A deleted scene had Egg Shen start to explain this only for Jack to tell him he didn't care. IIRC, what little got out was Lo Pan had killed some woman with green eyes that the emperor cared about or something like that.

I always thought it had to do with the mineral jade which is green. Its so present in Chinese art.

Green eyes are very desireable you know. It is one of the rarest types and the most popular one that people change their eye color to.
