First scene, none of La Hood's men die?
These are miners who have a stake in the land they sit on. They have been attacked by marauders who beat them, damage their property, terrorize their women and children and kill their pets. Ruin their simple homes.
I'm not an expert in western history but these people would have been a pretty raw bunch of individualists. They would have been armed(And knew how to shoot) and most would have worked to protect their few precious things and families. Despite being out manned and out gunned they would have fought back and many if not most of La hood's men would have been killed.
I'm sorry but these would not have been peace loving Mennonites. They would have killed anybody who came to harm their families and destroy their homes. These people could not even go into town without being beaten and robbed by these assholes. They would have worked together, laid traps, do whatever it takes to defend themselves.
