I've always read the scene (as well as the film) this way.
Amy clearly wants to have sex and so does Charley, but he's often distracted by his obsession with horror films, which clearly annoys Amy and puts a real damper on their relationship. Enter Jerry: handsome, charming, suave and obviously interested in Amy. When they meet it's shown that Amy has a hint of a teenaged crush on Jerry, much like how most teenagers crush over older people.
When they dance together, a lot of people say she's being hypnotized by Jerry, but I actually don't think she is. One, because it's never hinted that Jerry has the power of hypnosis, just that he's genuinely charming and he takes advantage of his looks. Two, because it is hinted that Amy is tempted by Jerry, despite her relationship with Charley. Three, because if Amy were hypnotized, she wouldn't have stopped Jerry from biting her in the middle of a club. I honestly think Amy is drawn to Jerry, but she's still in a relationship with Charley.
The biting scene, however, I see as Amy giving up on her relationship with Charley and accepting Jerry. She doesn't stop Jerry from coming near her, but she does flinch when he reaches to kiss her neck. Instead of biting her anyways, Jerry holds back as if to reassure her and in a moment that I really like, he stops her from saying something that looks like her admitting that she's never had sex before. Jerry notices this and almost looks sympathetic towards her when he realizes it, but then she undoes her dress for him, indicating her consent. She's given up on waiting for Charley to pay attention to her and accepted the affections of an older man, no matter how old he actually is and how supernatural he is or what he could do to her.
That's how I see it, anyways.
