I think a lot of people missed this in the movie. When Ed is staked, he reverts back to a human. But Peter Vincent removes the stake from his heart and then leaves.
In most vampire lore, staking a vampire through the heart does not kill a vampire. It only paralyzes them. Once the vampire is staked, then you have to decapitate it. But if the stake is removed, then the vampire is reanimated.
Peter Vincent made a comment that everything that works in the movies seems to work in real life. But the paralysis feature doesn't really occur in movies much. It exists in folklore, but the movies have changed it so the stake kills the vampire. Another thing to note is that staking Jerry didn't kill him.
So Peter removed the stake, which reanimated Evil Ed and thus his body was not left behind.
