What does the title have to do with anything? "Enemy Mine"? Is it referring to the Drac mining or something like "Enemy of mine(possessive)" or both?

It is the possessive. Just saying enemy of mine.

Enemy Mine as in "this is my enemy". The producers, however, found it too confusing, so insisted that they include an actual mine in the movie with bad guys, so that those who couldn't figure out possessive sense, would know it was an actual mine for ore.
