Ok, George changed because he knocked Biff out and gained confidence. Lorraine was different because now her husband wasn't a pathetic wimp.
but what made the brother and sister (forgot their names) change?
And how is the sister so popular with the guys even though she is still so fat?

Because the brother and sister were raised by confident, successful, healthy, stable, and attentive caring parents this time around.

The parents are different people and have thus raised their children differently than the original counterparts.
