Sarah's phonecall to Ginger played a vital role in John Connor's conception. If the Terminator hadn't tracked Sarah to Tech-Noir, the police would have picked up Sarah and put her in protective custody before Reese was able to approach her, there would have been no gun battle, Reese wouldn't have been able to tell Sarah about the future because there was no way of getting to her, so Sarah and Reese wouldn't have become fugitives that ended up in a motel, etc.

He would have figured it out soon enough, i.e., once he saw on the news that the woman he killed wasn't named Sarah Connor.

The middle-aged Sarah Connor confirmed her identity. The Terminator would likely have sought confirmation that the woman he just killed (Ginger) was Sarah.
