It was raining that night when they had their first argument and she ran away from the ice rink. I thought water was supposed to make her turn into the mermaid?

That followed closely afterward, and we never see her being touched by rain at all. The audience is supposed to accept that she managed to find shelter underneath the bridge before it started raining.
The thing about it having to be salt water for her to turn into a mermaid, is nonsense. That would mean she could easily walk through the rain back to Alan's place or some other more safe place to hide out - but she didn't.
Also, when the villain dude near the end sprayed her with water, we can safely assume it's regular water given that it comes from prefilled portable containers, and it still works on Madison.
Well that's true so I guess the OP's question is a very valid one. She needed to buy a full length rain coat, waterproof boots and umbrella.

Then why did she need the salt water for the bathroom scene? And if ANY water will turn her back did that mean she didn't bath or even wash her hands at all during those 6 days (excluding the bathroom of course).
Maybe she cleaned and grew the tail at times?
Maybe the salt was just a preference, it felt better - natural and familiar.

She was a salt water creature. As someone else has said, it was what was "familiar" to her, so it was just a preference thing. Also, when bathing in fresh water for a longer duration, I think it hurts her (like how her tail was peeling when she was being observed by the scientists, coupled with the stress she was experiencing of course).
