Not to sound harsh, but if ya gonna post in a Macross: DYRL board, refer to VFs as Valkyries, not Veritechs. The purpose of the pilots helmet had various uses. It's main use was the ability to enclose the pilots entire head. This was especially useful during space battles. If the pilot was blown out into space, atleast he has limited air. If you have watched up to Macross Plus and 7, it is explained to a certain extent that the helment possesses neural receptors that enhance the abilities of the pilot, especially in bioroid mode. I believe if you read the RPG books on Macross, it explains in detail the purpose of the pilots helmet in conjunction with neural enhancers.

Sorry again for the first sentence, Robotech came from Macross, not the other way around. Got to go back to your roots to understand everything such as protoculture was not an energy source in the Macross Universe, yet more of way of life.
