I thought she looked her best in the first part of TESB, in that simple white jacket and pants.

Most of all I loved her sassy personality. She wasn't just a pretty face.
That's one thing that annoyed me about the end of Rogue One. She was this smiling Disney fairy godmother instead of the (as you said) sassy Princess we all know and love.
