Possible episode?

I seem to recall an episode that had an ending which reminded me of the ending of the movie, "Thunderball." In this episode, Lee and Amanda are out on the ocean aboard a sinking yacht. Also on board was this timid man who I believe was the yacht's bartender, and I recall him having a mustache. This timid man was quite frightened when the boat began to sink, because he said he couldn't swim. Amanda helped this guy get into a life jacket, and then they both went to the side of the boat where Amanda then coaxed him to jump into the water. Immediately after this guy jumped into the water, Amanda ran back inside the yacht to join Lee.

A few moments later, the yacht started to sink at a faster rate. Lee and Amanda then ran to the side of the boat, where at that point Lee pulled on the cord to an inflatable life raft; which immediately began to inflate. Once the raft was completely inflated, Lee helped Amanda get into it. Before getting in himself, Lee ran back inside the boat and grabbed a bottle of champagne(?) from the yacht's bar. Lee then ran outside and got into the raft. Once he was in the raft, he showed the bottle to Amanda and said, "I can't leave this behind."

A few moments later, the boat sank beneath the surface of the water. Lee and Amanda floated on the raft, and drank a toast from the bottle. Suddenly, a helicopter flew in and hovered above them. The helicopter pilot lowered down a harness and rescued both of them from the raft, and that--from what I can recall--is how the scene ended.

Was the scene described above(or anything remotely similar to it) an episode from this series? Or am I thinking of an entirely different series, or even a movie? Any help would be most appreciated. Thanks!

I've watched most, if not all, episodes of 'Scarecrow...' several times and I have to say this does not ring a bell and I'm pretty sure it's not from an episode.

Unfortunately, I can't tell you what it is from.

Laura, it's getting away from us again!

Your synopsis is vaguely familiar. It's definitely not from an actual episode, but I bet it is from a fan fic. Unfortunately, I can't recall a name nor can I find it using some of your key words on any fan fiction site.
Good luck with your quest.
