I now know it was Stephen Garlick, but while I was watching this I could have sworn the voice of Jen was Matthew Brodrick.

Actually, you're wrong. Jim Henson was the voice of Jen. Look at the credits both in the movie, and here on IMDB.

I used to think that too but he's not. Jim Henson is just the puppeteer. The one who did his voice is some other guy. It lists his name further down in the credits.

Not to be unkind, but Jen's voice didn't impress me all that much. Maybe it was just the dialogue he had.

He sounded kind of like Mark Hamill to me. Obviously not, but during a lot of his dialogue, all I could see was Luke Skywalker in my mind.
