I know they were sealed up and doomed never to be found

But what about the remaining Monks ...they would've known of the Castle ambush plan yes ? and realised that something had gone wrong when the Three Monks hadn't checked in

someone couldve gone out to free those two

There were vicious killer dogs at the castle, as I recall.

I’m not sure there were, but that wouldn’t stop a rescue mission from being launched.
