can anyone describe the deaths or are they all knive stabs

I can help you out:

Ed- While everyone was getting ready to enter the train, Ed gets run through from behind with a sword and dies while everyone's laughing thinking it's a prank.
(the killer takes his costume and shoves underneath the train...OUCH)

Jackson- While drunk, he enters a bathroom to meet what seemingly looks like Ed until the killer smashes his head against a mirror. (the killers also takes his costume.)

Mitchy- The hot babe of the group. She thought she was gonna have a good time with "Jackson" until he tricks into going in an empty cabin to get her throat slashed.

Mo- While the magician was performing some tricks, he was stabbed in the chest
off-screen while the train conductor and JLC were trying to figure who's the killer.

Doc- While desperately trying to lock himself up inside an empty room, he realizes too late that the killer is in the room with him and gets decapitated with a knife
and JCL finds his head in an upper luggage compartment.

Crew member- While searching the train for the killer, his body is later seen in an empty room sitting in a chair with a knife sticking out of his chest.

The Magician (a.k.a. David Copperfield)- JCL finds him inside his own magic box with many swords protruding out of him. (possibly after finding out that his female assistant was a crazed killer)

Charly- Uncomfirmed, when JCL finds out that Kenny is the killer she enters the brakeroom to find Kenny dressed up as Charly.

Kenny- While going crazy after sharing a kiss with JCL, the conductor enters the room in time to violently shovel him out of the train and falling into a frozen river.

I never understood including the killers death in the bodycount. He's the killer.

Your making the mistake of thinking your more important than you actually are.

I do believe you might have missed the train engineer and the coal shoveler aptly named 'Shovels'. We didn't actually see them get killed, but at one point the conductor, played by Ben Johnson, goes to the engine, sees the two men missing, finding only the engineer's cap with a bit of blood on it...other than that, your list seems complete.
