Could someone tell me how they knew where he would strike next? I saw up through where they talk in the kitchen, starting to say how time is not their enemy, and then how he's against violence and she says she loves him. I missed that middle part.

I've watched this movie several times, and I think I finally figured that part out, which is confusing. When Herbert first takes Amy in the time machine to prove he's telling the truth, they go forward a few days to Saturday. When they get out, she picks up a newspaper, sees that it is indeed Saturday, and also that she was killed the day before. That's when Herbert says something like "We've got to go back". Presumably, although they don't show it, they go back into the time machine and go back a few days to the day they originally started, so now they know the future based on the newspaper they kept.
