Why did Stewart Granger's character(Matherson)double cross the mercenaries he hired to do the job? Just money(he seemed rich enough already) or some political reason?

He used the rescue mission for Limbani to coerce a favorable deal out of the current corrupt government. Once that was signed he double-crossed the mercenaries so A.) Limbani would die, and B.) He wouldn't have to pay the mercenaries, whom he expected would be wiped out by the Simbas.
And there's no such thing as "rich enough" for rich people. You've heard the saying, "You can't be too rich or too thin."
