In perfect honesty, moviewise, it would've ruined the pacing. It was a long continuous shot, which is what Carpenter was going for. Only 3 cuts. It's not wise to keep the audience waiting, especially in the opening. The whole point was not about the length of the sex, but the sex itself, the "message" of distraction. It was simply an means to Judith's end. Had that not occurred, Michael would've had to find another way to surprise kill her. 6 year olds usually don't overtake teenagers, even female ones and *that* aspect couldn't be revealed til the unmasking. To put it simply, storytelling.

This is because of the crude theme of Sex = Death that has been latterly imposed on the film and indulged by less than illustrious copycats since.
Maybe she knocked him back.
Maybe he wasn't up to it.
Can't rule out the possibility he suddenly remembered there was something he had to do and so he left. Sure, it's more likely they had a "fastie" (don't quote me on that, haha), but the bottom line is that scene wouldn't be nearly as effective if Michael waited another 3-5 minutes for Judith's boyfriend to finish.
