They turned their back on her like she did to them and Mr. Snoops. Madame Medusa pretended to be kind and loving to the alligators while she needed them much like she did to Penny (Snoops could be persuaded with intimidation much better than either Brutus and Nero or Penny); after getting her hands on the diamond and watching it get away from her she lost her composure and revealed her truer nature to them.
