need a few quotes from the film


I found it rather difficult to understand a few words that Donald Sutherland (Liam Devlin) says in three scenes, primarily due to his heavy accent, and I am very curious to know those quotes. Unfortunately, none of them are mentioned on IMDb.

These are the scenes:
1) Liam wearing the parachute before getting in to the plane. Oberst Steiner asks him if he is going to jump out the plane wearing those clothes. Liam mentions an Irish poem:
"I realized fear one day...
...
It's better to be dressed as the hound."

2) Liam is on the beach front with Molly Prior. What does he tell her at the start. Also, when Molly starts to leave him and he pulls her back, he says:
"...You don't know the first thing about me, but if you did, you'd know that I much prefer a warm afternoon under the pines to a wet Saturday night in the bed...The sand is a terrible..." (what words follow?)

3) At the end of the movie, what are the entire contents of the letter Liam writes to Molly?

"It might look a bit silly going down Mr. Steiner, but i'll be hell of a lot safer when i land on the ground.
There is an old poem i know, which freely translated from the Irish says; i realized fear one morning, when the blare of the fox-hunters sound. When they are all chasing after the poor bloody fox, it's safer to be dressed like a hound."
