Her name is Weiss, which is pronounced like Vice in German. Maybe it's something to do with that. Also their professor was German, so he might have picked that up from him. Being American, she probably doesn't say it that way.

Vice is a slang term for bad or immoral behavior. Bad and immoral could be a good definition for Frankenfurter. There even used to be a section in the police department call The Vice Squad. If you wanted to be report a crime that the police labelled as Vice they would transfer you to the Vice Squad. Just like when you wanted to report someone missing you would be transferred to the Missing Persons Bureau.
Brad made a Freudian slip of the tongue when he called Janet Vice instead of Weiss cause the situation he was in made him think of Vice.
