What is a Pimintain?

When Hammond tells Warren that Agamemnon can read, Warren says the following:

"Then whup him fierce! Hammond, you gotta cut deep, cause a black don't feel physical punishment as soon as a white man. And you rub in the pimintain after. Hurts like hell, but heals the scars right clean. And tell Lucretia Borgia to use fresh red pepper in the pimintain, fresh lemon, and plenty of salt. Plenty of salt, I say!"

I am probably misspelling 'pimintain,' but that's what it sounds like he is saying. Has anyone ever heard of that term? How is it correctly spelled?

reply

Pimentade. A mix of salt, cayenne pepper and lemon juice. It was rubbed on cuts and the open skin left by lashes to minimize scarring. And to make it hurt a lot.

Yes, I understood that part. What I'm trying to find is the word itself. I can't find it as Pimintain, Pimentade, or any other spelling variation. The only time I've ever heard that word was in this movie. Where does that word come from?

reply

Louisiana French. Piment = cayenne pepper, pimentade = made of pepper.

I'm giving you the correct spelling.
