Once you've seen this movie, you'll never forget this theme.Those were my exact thoughts when I saw this post. But yes, it's a wonderful theme.
I believe it was written by Barry DeVorzon, who is credited with doing the music for the film (and, notably, another Walter Hill film, The Warriors).
This would explain why it's not identified in the film, since beyond giving onscreen credit to the film's primary composer, individual titles are rarely listed, unless they were written by other people who thus also need to be credited.
