I assume the cockroaches were real, but how about the supercockroaches that caught fire? They both looked very real to me.

Yeah, real hissing cockroaches (from the African island of Madagascar) were actually used for the film, as well as roach models built specifically for it, form what I've read about the film.

I lived in Riverside, California where part of this movie was made. The giant hissing cockroaches used in the movie were provided by UC Riverside.
